I used to only like the family recipe potato salad….UNTIL I had Juan Pollo (So Cal chain only I believe.) everyone I know loves this stuff. It has black olives, shredded carrots, but it is not just mayo….not sure if it is sour cream, mexican creme or what. So good, I hope there is someone who know the recipe! Thanks
I’ve searched everywhere but can’t find the recipe. I think you may have to call the store. By law, they have to supply the ingredients if you ask them.
Juan Pollo Potato Salad Recipe
From my great grandmother by way of my Mom: Serves 4 to 8 Clean 8 russet potatoes Boil until fork tender. Peel and cut into bite size pieces. Place cut up pieces in non-reactive work bowl (I use a large Pyrex.) Pour 1/2 cup dill pickle juice from a jar of pickles over the hot potatoes. (Contains a lot of vinegar and a flavor that can’t be found in just vinegar.) To the potatoes add: one sweet onion, diced fine 4 dill pickles, diced medium 4 ribs celery, sliced 3 large eggs, hard boiled, peeled, and diced salt pepper celery seed enough Best Foods mayonnaise to bind the salad together. Chill for at least 4 hours. The longer it sits, the better it tastes. Keeps for about 4 days.
I know this question was posted 7 years ago, but I ll post this anyway just in case somebody comes across it…
4 russet potatoes whole unpeeled
1/3 c minced green onion
1/3 c shredded carrot
1/3 c roughly chopped blacked olives
3/4 c mayonnaise
1/4 c sour cream
salt and pepper to taste
1.) Boil 4-5 russet potatoes whole unpeeled. Place in refrigerator immediately. Wait 45minutes to an hour. Peel Potatoes then mash slightly. The refrigerator and mash process gives the salad the creamy texture!
2.) Add in green onion, carrot, black olives, mayonnaise, sour cream, salt and pepper. Mix well.
3.) Chill at least two hours!
