They are definitely more bitter and have a different texture – they don’t really get as soft as spinach, they have more of a ‘bite’. They are good prepared a bit on the salty side and are delicious with BBQ dishes, and pork … this is my favorite dish with collard greens –

Do not like the texture, smell or taste of collard greens. Yet father-in-law insists everyone eat some at his boiled dinners. For me its an exercise in digestive torture. I get nauseated just getting near the boiling pot. Sorry! There are better tasting green vegetables than collards.

They don’t cook at the same rate. Yes Just boil them in 2 different pots. Actually I would sautee the spinach. (heat 2 tb oil in a pan on medium add spinach and cook while mixing with spatula once spinash is cooked add salt and pepper (should not take long))

My grandmother used to cook collard greens w/ham hocks, bacon, salt pork, or smoked turkey wings. My grandfather would add a little vinegar after fixing his plate. I love them w/smoked turkey wings; then I add either vinegar or hot sauce.

They have a very strong flavor, and some people do find them a little bitter. Spinach is much milder in flavor.
